Job Overview
Prepare breakfast, lunch, and/or dinner for all areas serviced by Food Services as assigned by Executive Chef, Sous Chef, or First Cook. Performs necessary prep work to complete meals on daily basis and for next day's production needs. Responsible for the organization and sanitation of work areas.
Prepares main entr�es and other featured items according to patient menu, cafeteria, and catering needs including any modified diet needs, side dishes, cold production, and sauces. Adheres to standardized recipes. Ensures that food items are fresh, properly cooked, attractively garnished, and readily available throughout all service times. Cafeteria food is plentiful from beginning of meal shift through end of shift. Conducts proper labeling and dating of all perishable food products in refrigeration. All food is to be used in accordance to FIFO procedures and expired foods are to be discarded according to policy. Ensure proper temperatures of all prepared foods (hot and cold) as well as proper reheat and cooling procedures according to dept. and regulatory standards. Conducts proper technique in food preparation and reuse to eliminate waste. Efficiently and accurately prepares food items that are part of the a la carte Maintains food temperature logs in accordance with dept. and regulatory standards Proper and safe use of all kitchen equipment. Turns on all equipment at start of day and turn off all equipment at the end of the work day. Maintains organization of work area. Work area is organized, cleaned, and sanitized before breaks and end of shift as per dept and regulatory standards. Securely opens up the kitchen in the morning and locks up all areas before leaving shift. Meets all required competencies for department, unit and/or hospital. Responsible for performing all other duties as assigned.
Work requires a High School diploma or equivalent and up to one year of basic technical training in food preparation and six to twelve months of previous work related experience, plus three months or less of on the job training and orientation. Certification required as a food Handler from the city of Paterson or similar food safety certification.
